Whip Up These Tasty Scones For Mother’s Day
Mother’s Day is just around the corner. Hopefully you have your gift in order, but you might be hoping to do something else special for mom to show her how much you care. So you can enjoy some quality time together on her special day without having to fight the Southern California brunch crowds, we want to offer one of our favorite recipes: Cinnamon Bun Raisin Scones. To make them, you will need:
For The Scone
- ½ cup of raisins
- 3 teaspoons of ground cinnamon
- 2 cups of whole wheat flour
- ¼ cup of light brown sugar
- 1 tablespoon of baking powder
- ½ teaspoon of sea salt
- 3 tablespoons of unsalted butter
- ¼ cup of unsweetened almond milk
- 2 tablespoons of plain yogurt
- 2 teaspoons of vanilla extract
- 2 eggs
For The Glaze
- 2 teaspoons of unsweetened almond milk
- ½ teaspoon of vanilla extract
- ½ cup of powdered sugar
Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
Put the raisins in a small microwave safe bowl with 2 tablespoons of water and 1 teaspoon of cinnamon and microwave for 20 seconds to plump them.
In a separate large bowl, mix together the flour, sugar, baking powder, and salt. Cut the butter into the mix until the texture is that of coarse meal. Create a well, then add the almond milk, yogurt, vanilla, eggs, and remaining cinnamon. Mix with a fork just until combined, add in the raisins, and knead just until dough is formed.
Roll out the dough and cut 8 scones. Bake them for 12 minutes, or until golden brown.
While baking, mix the glaze ingredients together. Drizzle the glaze over the scones once they are cool and enjoy!
